You Got To Eat Something: 14. Sweet Potato, Bacon, & Apple Hash

From my cookbook, You Got To Eat Something, comes this easy recipe.


Another recipe with a bare minimum of ingredients. This time there are just four and the most time you’ll spend on this will be chopping.


2 sweet potatoes
Package of bacon
2 Apples


Heat the oven to 400°. Peel and dice the sweet potatoes into cubes. In a large bowl, add the sweet potatoes, drizzled with olive oil and sprinkled with salt. Toss to coat and arrange them on a baking sheet. Roast the sweet potatoes until they are soft but not mushy, about 10 to 15 minutes. Remove from the oven then set aside.

Dice the onion. Core and dice the apples. In a large saute pan, add bacon and fry until near crisp. When the bacon has started to get crispy and brown, add the onions. After about five minutes add the apples and sweet potatoes. 


Stir/saute until the apples are cooked and sweet potatoes are soft which usually takes at least ten minutes.

By the end you should have a nice sweet potato hash/mush. I would imagine you could make this vegan by replacing the bacon with vegan bacon or tofu.
