I love snacks. Like waaay too much. At nearly forty, I’ve had to come to terms with the fact that eating a bag of chips, a pint of ice cream, and a six pack of craft beer in one sitting is not the best for my health. If ever it was.
In order to up my intake of raw veg and sublimate my desire for chips, I put together this ‘dip,’ if you will. Again, not my own from scratch invention but rather an augmented version–I tend to go overboard with dairy.
I love cheese. I love crackers. So I purchased a punch of nut and rice crackers to augment my baby carrots, made a rather cheese-tastic dip, & had a good snack.
Something delicious & easy.

Whipped Feta & Goat Cheese
4 oz. Goat cheese
5 oz. Feta crumbles
8 oz. Cream cheese
16 oz. Heavy whipping cream
Teaspoon Kosher salt
Teaspoon Olive oil
Put all the ingredients into a food processor until smooth. I’d suggest refrigerating for at least an hour before serving (and keeping refrigerated, of course) and that’s it.
I’m now eating this with rice crackers, carrots, celery, broccoli, spoons…
